If you are in the St. Louis area and follow the food scene religiously, you’ve probably heard of The Newlywed Chefs. This talented duo – Whitney and Neil Ostercamp shares their culinary adventures through recipes, restaurants reviews, and more. Of course, these two were gracious enough to share their kickass Pumpkin Muffins recipe with us. So if you are all about cozin’ up this Fall, we recommend trying these delicious muffins, best paired with your hot chocolate or cider and a flannel jacket.
2 cups flour
2 teaspoons baking powder
1 teaspoon baking soda
½ teaspoon salt
2 teaspoons cinnamon
2 cups of pumpkin (one 15 oz. can)
2 cups sugar
1 cup Crisco oil
3 ounces of softened cream cheese
6 tablespoons of softened butter
1 tablespoon cream
1 teaspoon vanilla
1 ¾ cups powdered sugar
Start at the bottom of the ingredient list and mix together. Place batter in an 11 x15 inch pan and bake at 350° for 25 minutes. If making cupcakes, cook for about 19 minutes.
For frosting, it is a good idea to double the frosting recipe when making cupcakes. You will likely have some left over, but you are sure to find many ways to use it.
